Pickle Juice: A look into the microcosms of fermentation

This workshop explores the microcosm of fermentation. Through cellular metabolism, the various fruits, vegetables and brine transform into compelling flavours.

It opens up conversation on the basics of fermentation as well as exploring the stages of agitation that change the structure of the ferments over time.

 

The bubbling effects of fermentation allows us to think of the spectre of climate change; rising temperatures, melting glaciers, rising seas and shifting currents. By thinking of fermentation as a cooperative and collaborative model, we can follow and utilise its methods to create small change in our daily lives.

By creating our own microcosms of fermentation, we allow ourselves to consider the way a single environment can create a harmonious cohabitation. The participants will each be given a 250ml jar to fill with various fruits, vegetables and herbs, creating their own edible terrariums.

With time and patience, the invisible forces of labour work their mystic ways to create ferments that each participant can consume.
